# Add
sugar and yeast into warm water and make them dissolve. Add
milk, egg white, oil and salt. Knead the mixture by adding
flour in it little by little until the mixture turns into soft dough.
# Cover the prepared dough and rest it at room temperature for about 1 hour.
# Meanwhile, prepare the filling mixture. Fry the half circle shaped sliced sausage pieces for 5 minutes. Then, add
tomato paste and salt.
# When the smell of the
tomato paste goes away, add peeled and thinly chopped
tomatoes. Cover the lid of the pot and cook it for 10 minutes. Then, remove it from the stove.
# Divide the rested dough into 4 equal pieces. Roll out each piece over the
floured bench by a rolling pin until each one reaches a medium size baking tray size.
# Cut each rolled out dough piece into 8 equal triangle shaped pieces. Put enough filling mixture onto the wide sides of the triangle. Fold the left and rigt sides of the triangle to prevent the mixture exit. Then, roll it.
# Transfer the boreks into a greased baking tray by getting their folded sides down and with some spaces between them.
# Cover the tray and rest the boreks for 20 minutes before placing into the oven.
# At the end of the resting time, spread mixture of egg yolk and
milk all over the boreks. Place the tray into the oven which is preheated to 375 F. Bake the boreks, until they turn into red.
# Serve them warm.
